Baby it's HOT outside! Stay cool with this sweet treat: peanut butter cookie ice cream sandwiches!
You may not feel like turning on your oven in this summer heat, but we promise you, it's worth it! Crank the AC and grab the kids: these classic ice cream sandwiches will have you and your kids shouting for more.
You will need:
Prepare the peanut butter cookie mix according to package instructions. Bake as instructed and then cool completely on a wire rack.
While the cookies cool, get out your sprinkles and ice cream scoop!
Scoop 1/4 cup sized scoops of ice cream onto the bottom side of one cookie, then sandwich the bottom side of another on top. Holding the cookie sandwich in one hand, use the other (or enlist a little one!) to add the sprinkles around the sides.
Please finished ice cream sandwiches back in the freezer on a parchment lined baking sheet if not enjoying them immediately.
NOTE: you can use any type of peanut or other nut butter to make these cookies. Almond, cashew, any kind will do. For ice cream, choose your favorite dairy or vegan brand. Coconut-based ice creams are a great substitute for dairy if you're choosing a plant-based lifestyle.
