Summer may be over this weekend (how is that happening already?!) so go all out with your Labor Day celebration on Monday and bake these healthy, sweet and delicious Berry Donuts!
All you need is a baked donut pan, a box of our Blueberry Muffin Mix, some fresh berries (we went with strawberries) and a little powdered sugar.
Enjoy this last hurrah of summer and make it a sweet one!
You will need:
Preheat oven to 375 F. Grease a bakable donut pan with oil.
Prepare the Blueberry Muffin Mix according to package instructions, but substitute 1 cup chopped strawberries for the blueberries. Divide prepared batter among donut pan cups (you may need two, depending on how full you make them). Bake as instructed and then cool completely.
While the baked donuts cool, prepare the glaze by whisking the powdered sugar and water together in a small bowl. Tint it pink with a little dye-free food coloring or a squeeze of fresh strawberry juice.
Dip the donuts in the glaze and leave at room temperature on a cooling rack for the glaze to set. Store in the fridge for up to 3 days.
